Tenuta Pra ‘De Oro breeds organic cycle snails complete with mixed method (indoor plus open field and greenhouse). A method – designed by Jessica Pessotto – centered on respect for the snail, its health and its integrity. In a biologically perfect habitat suitable for enhancing its qualities, snails are fed in a totally organic way with officinal herbs and flour. This allows to obtain an excellent meat in terms of gastronomy and an excellent burr.
For the collection of burr we use snails of the variety Helix Aspersa Muller, a unique species of snail characterized by a very intense colored shell, a well-defined border and an exceptionally robust consistency. The burr collection takes place with a unique and patented machine, certified cruelty free: this raw raw material, already microfiltered and pure, can already be used for food and cosmetic use. After extraction, the snails are returned to the open field to resume their normal life cycle.
2 hectares of vineyards, 8500 square meters dedicated to horticulture, for a total of about 33,000 square meters of land. Tenuta Pra ‘De Oro also cultivates aloe, achilea, arnica, calendula, chamomile, carrot, lemongrass and various spices.
